Full cherries then undergo an anaerobic fermentation for for 24 hours at 18-20° C. At the Campo Hermoso R\u0026amp;D Center, cherries begin a carbonic maceration process for 48 hours in tanks, collecting the mossto (cherry juice). The cherries are pulped at a red honey level and then the mossto is made into a starter culture with inoculated yeast and glucose solution. This mixture is then poured into the pulped coffee along with fruit pulp and dried fruits in a 30% submerged fermentation for 72 hours.\u003c\/p\u003e\n\u003cp\u003eDrying and Final Process: Raised Beds in the sun in a greenhouses for 10 days, stabilized with dry pulp for 8 days then washed. Then stabilized for 10-15 days.\u003c\/p\u003e\n\u003cp\u003eEdwin Noreña is a fourth-generation coffee grower, a trained agronomist and agroindustrial engineer, and an overall innovator with coffee. With 20 years of coffee production experience, his dedication to specialty coffee is impressive.
